CHOCOLATE CAPPUCCINO CHEESECAKE

Ingredients

  • Crust: 1 ½ c. chopped pecans
  • 1 ½ c. chocolate wafer cookies
  • ¾ c. melted butter
  • ½ c. melted chocolate chips
  • Filling: 16 oz. cream cheese, softened
  • 1 c. brown sugar, packed
  • 4 eggs
  • 2 tsp. vanilla extract
  • 1 ½ c. melted chocolate chips, cooled
  • 1/3 cup cold brewed coffee
  • 1 c. sour cream
  • Topping: 1/3 c. whipped cream
  • ½ c. melted chocolate chips

Directions

  • Mix pecans, cookies, and butter and press into greased spring form pan.
  • Drizzle wit chocolate and chill.
  • Blend all filling ingredients until smooth.
  • Pour filling into crust; bake at 300 degrees for 1 hour.
  • Reduce heat to 275 and bake 2 hour, reduce heat to 250 and bake 30 minutes more.
  • Cool completely.
  • Blend chocolate and whipped cream until smooth and creamy and drizzle over cake.
