Chocolate Caramel Oat Squares

Ingredients

1 ½ C flour
1 ½ C oats
1 ½ C brown sugar
½ t baking soda
¾ C unsalted butter, cut into pieces
12 oz chocolate chips
½ C whipping cream
14 oz caramels


Preheat oven to 350.


Combine first four ingredients in food processor. Cut in butter until crumbs stick together. Reserve 2 cups of mixture in a small bowl. Press remaining crumbs into a 9x13 pan. Sprinkle chocolate chips over evenly.


Unwrap caramels. In a small saucepan, simmer whipping cream. Add caramels and stir, over medium-low heat, until melted. Pour evenly over crust/chips. Sprinkle with reserved crumbs.


Bake about 15 minutes at 350. Cool. Run a sharp knife around the edges of the pan. Cut into small squares, and refrigerate about 3 hours. I usually make 40 squares, because they are very rich and almost taste like little candy bar bites.

The most time-consuming part of this is unwrapping all the caramels!
