Chocolate Chip Cake
Why I Love This Recipe
This is a nice "from scratch" cake with a frosting that tastes & feels like pudding.
Ingredients You'll Need
1/2 cup shortening
2 1/2 cups sugar -- divided
2 1/2 teaspoons vanilla -- divided
2 1/4 cups sifted all purpose flour -- (or 2 1/2 cups & 1/2 tablespoon cake flour)
2 1/2 teaspoons baking powder
1 1/8 teaspoons salt -- divided
2 1/2 cups water -- divided
3 egg whites
4 ounces unsweetened chocolate -- divided
1/4 cup cornstarch
1/2 cup milk
1 teaspoon butter
Cream shortening, 1/2 cup sugar & 1 1/2 teaspoons vanilla until fluffy.
Sift together flour, baking powder & 1 teaspoon salt & add alternately with 1cup water to creamed mixture.
Stiffly beat egg whites & fold into batter.
Grate 1 ounce chocolate & fold into batter.
Bake in 2 greased & floured 8-inch round layer pans at 350º for 30-35 minutes.
Cool 10 minutes in pans, then turn out onto wire racks & cool completely. Frost with Creamy Soft
Mix 1 cup sugar & 1/8 teaspoon salt & cornstarch in saucepan.
Stir in 1 1/2 cup water. Cook & stir until thick & clear.
Combine 3 ounces chocolate & milk in top of double boiler. Cook until melted.
Add to cooked mixture. Add butter & 1 teaspoon vanilla.
Cool & spread.
