- Preparation Time:
- 3 cups flour
- 3 eggs
- 2 cups sugar
- 1 cup oil
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 cup sour cream
- 2 cups grated zucchini
- 1 cup chocolate chips (I use mini-chocolate chips, so they don't sink)
- Preheat oven to 350 degrees F. Grease two loaf pans (I use the foil ones).
- Mix together all of the ingredients except the zucchini and chocolate chips until well-blended. Stir in the zucchini and chocolate chips. Pour into the 2 loaf pans and bake for 1 hour and 15 minutes.
NotesMy mother-in-law gave me this recipe almost 30 years ago. It was the first time I had tasted zucchini bread and, to this day, it is the only recipe I have ever used. Around the holidays, I like to wrap a loaf in cellophane, tie it with a ribbon and give it as a gift.
