CHOCOLATE CHIP AND SOUR CHERRY MUFFINS

Ingredients

  • 150g butter
  • 3 eggs, beaten
  • 2tbsp plain yoghurt
  • 4tbsp milk
  • 1tsp vanilla extract
  • 125g golden caster sugar
  • 250g self-raising flour
  • 25g cocoa powder
  • 150g chocolate chips
  • 150g sour cherries

Directions

  • 1. Pre-heat oven to 190C/375F and line a muffin tray with paper cases
  • 2. Melt butter and combine with the beaten eggs, yoghurt, milk and vanilla extract.
  • 3. In a separate bowl combine the sugar, flour, cocoa powder and a pinch of salt
  • 4. Add the liquid ingredients to the dry ingredients and combine, then fold in the chocolate chips and cherries
  • 5. Divide the mixture between the cases and bake for 25-30 minutes
