Chocolate Chocolate macadamia cookies

Serves 4 dozen | Prep Time 15 minutes | Cook Time 10 min per batch


1/2 cup butter soft
1/2 cup shortening
1 1/4 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2/3 cup cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2 cups mini chocolate chips
2/3 cups macadamia nut halves

Preheat oven to 350 degrees

In large bowl, beat butter, shortening, sugar, eggs, and vanilla until light & fluffy.

Combine flour, cocoa, baking soda, and salt-- stir into butter mixture until well blended.

Mix in chocolate chips.

Form walnut sized balls of dough and put 3 or 4 macadamia nut halves in each dough ball.

bake on un-greased cookie sheet for 10 minutes in preheated oven-- or until set.

Cool 2 minutes on cookie sheet -then transfer to wire rack

makes 4 dozen large cookies

If your cookies come out hard stick a piece of bread in with the cookies in an airtight container. My kids don't get the lid on the tupperwear all the way--so every time I make cookies I stick a piece of bread in--it works wonders!

My husband wanted a soft chocolate cookie with macadamia nuts --it took a couple batches --but this is the final product--makes big yummy cookies!
