Chocolate Coffee Crinkles
2-100g bars dark chocolate
1 1/2 cups all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1 cup granulated sugar
1/2 cup softened butter
1 1/2- 2 tsps pure vanilla extract
2 large eggs room temperature
1 1/2 tsps instant coffee granules
warm black coffee
Break up chocolate bars and microwave 1-2 mins until melted. Stir in coffee granules and cool to room temperature.
Combine flour, baking powder and salt in a small bowl and set aside. In another bowl beat sugar, butter and vanilla extract. Beat in melted chocolate. Add eggs one at a time beating well after each addition. Gradually beat in dry ingredients. Cover and refrigerate mixture until firm.
Preheat oven to 350 degrees Fahrenheit. Shape dough into 1 1/2 inch balls and roll in powdered sugar. Place on ungreased baking sheets. Bake for 10-15 minutes or until sides are set, but centers are still slightly soft. Cool on baking sheets 2 minutes and then remove to wire racks to cool completely. Drizzle with coffee icing when completely cooled.
1 cup powdered sugar
Warm black coffee OR 2 teaspoons instant coffee granules dissolved into hot water.
Combine sugar and coffee granules. Mix in enough hot water to mix to a drizzle consistency. Drizzle over cooled cookies.
