CHOCOLATE ESPRESSO NO-BAKE COOKIES

Ingredients

  • 2 C sugar
  • 1/4 C cocoa
  • 1/2 C espresso (strong coffee should also work)
  • 1/2 C butter
  • 1/2 C peanut butter
  • 3 C oatmeal

Directions

  • Slowly bring first 4 ingredients to a rolling boil (otherwise cookies won't set properly) and then boil one minute while stirring constantly.
  • Remove from heat.
  • Stir in peanut butter until melted and then add oatmeal.
  • Mix.
  • Drop by spoonful and let cool (will set much more quickly if refrigerated).
  • Enjoy! :-)

Notes

I decided to make chocolate no-bake cookies and switch 'em up a little. I replaced the milk in the recipe with espresso.

Espresso + chocolate + peanut butter = Good!
