Chocolate Espresso No-Bake Cookies
2 C sugar
1/4 C cocoa
1/2 C espresso (strong coffee should also work)
1/2 C butter
1/2 C peanut butter
3 C oatmeal
Slowly bring first 4 ingredients to a rolling boil (otherwise cookies won't set properly) and then boil one minute while stirring constantly.
Remove from heat.
Stir in peanut butter until melted and then add oatmeal.
Drop by spoonful and let cool (will set much more quickly if refrigerated).
Pairs Well With
I decided to make chocolate no-bake cookies and switch 'em up a little. I replaced the milk in the recipe with espresso.
Espresso + chocolate + peanut butter = Good!
