- Cooking Time:

- 2 C sugar
- 1/4 C cocoa
- 1/2 C espresso (strong coffee should also work)
- 1/2 C butter
- 1/2 C peanut butter
- 3 C oatmeal
- Slowly bring first 4 ingredients to a rolling boil (otherwise cookies won't set properly) and then boil one minute while stirring constantly.
- Remove from heat.
- Stir in peanut butter until melted and then add oatmeal.
- Drop by spoonful and let cool (will set much more quickly if refrigerated).
- Enjoy! :-)
NotesI decided to make chocolate no-bake cookies and switch 'em up a little. I replaced the milk in the recipe with espresso.
Espresso + chocolate + peanut butter = Good!
