Chocolate Fudge Cheesecake
1/3 cup melted butter
1/2 cup confectioners' sugar
1/3 cup good quality cocoa
1-1/2 cups crushed vanilla wafers
2 cups semisweet chocolate chips
3 pkgs. (8 oz. each) cream cheese, softened
1 can (14 oz.) sweetened condensed milk
2 teaspoons vanilla
Crust: Combine crust ingredients and press into bottom of a 9-in. springform pan. Set aside.
Preheat oven to 300ºF.
Melt chocolate chips very carefully in microwave, perhaps 2 minutes, stirring halfway through. (Watch carefully to avoid burning or "seizing" the chocolate.)
In a large bowl, beat cream cheese until fluffy, then beat in condensed milk and eggs. Mix in melted chocolate and add vanilla. Stir. Pour into pan, bake for 1 hour and 15 minutes, or until center is set (may be a little wobbly). Cool completely then refrigerate for several hours.
