- 3oz chocolate goat cheese, room temperature
- 2 tbsp confectioners' sugar
- 1/4 cup dried cherries, chopped
- 1/4 cup almonds, crushed
- Stir together goat cheese and confectioners' sugar, and mix in cherries. Drop by rounded teaspoon-fulls (I used a small cookie scoop) onto wax paper lined plate. Place in freezer for about 15 minutes to firm up. Remove from freezer and roll truffles in crushed almonds. Enjoy immediately, or refrigerate until ready to serve.
NotesMy inspiration came from chocolate goat cheese I bought last weekend. Some people might wonder, "What the heck does one do with chocolate goat cheese?" Well, eat it with fruit and nuts, of course! I decided to make chocolate-goat-cheese-cherry-almond-truffles. If you can think of a cuter, shorter name, let me know!
