  • 1 cup whipping cream
  • 1oz semi sweet baking chocolate, chopped
  • 1 oz unsweetened baking chocolate, chopped
  • 1 cup half & half
  • 1/2 cup sugat
  • half 1/3 cup cocoa powder
  • 4 egg yolks
  • 2t vanilla
  • pinch of salt


  • in small saucepan melt both chocolates in a 1/4 cup whipping cream on medium heat set aside when done
  • in medium saucepan heat half & half on medium heat until steamy, set aside when done
  • In small bowl mix together sugar and cocoa set aside
  • place yolks in mixer bowl start mixing on speed 2 slowly add sugar mixture
  • then add chocolate mixture (you may have to stop the mixer a few times)
  • then add half & half mix well
  • return mixture to medium saucepan on medium heat stir constantly until it gets very steamy
  • pour into bowl, mix in remaining cream, vanilla, and salt
  • chill overnight (at least 6 hours)
  • pour into ice cream maker and process until desired consistancy then freeze at least 2 hours.
