Chocolate Meringues

Serves About 2 1/2 Dozen | Prep Time About 15 minutes | Cook Time 10-11 minutes


1 cup (6 ounces) semisweet chocolate chips
2 egg whites
1/2 tsp white vinegar
1/2 tsp vanilla or almond extract
1/4 tsp cream of tartar
1/8 tsp salt
1/2 cup sugar
1/2 cup flaked coconut
1/4 cup chopped almonds

In a microwave or heavy saucepan, melt the chocolate chips

Stir until smooth

Set aside

In a mixing bowl, beat the egg whites, vinegar, vanilla, cream of tartar, and the salt on medium speed until soft peaks form

Add the sugar, 1 tablespoon at a time.

Beat on high until stiff peaks form, about 5 minutes

Fold in the melted chocolate until combined

Fold in the coconut and the almonds

Drop by tablespoonfuls 2 inches apart onto lightly greased baking sheets

Bake at 350 for 10-11 minutes or until firm

Remove to wire racks to cool

Store in an airtight container
