Chocolate Mocha Cheesecake
1-1/2 pkg. (8.5 oz. ea.) chocolate wafer cookies - about 60 cookies
1/4 lb. unsalted butter, room temperature
1 pkg. (12 oz.) chocolate chips
2 pkgs. (8 oz. each) cream cheese, room temperature
1-1/4 cups sugar
6 large eggs
1 cup whipping cream
2 teaspoons vanilla extract
1/4 cup Kahlua or strong coffee
Crust: Crush cookies to measure 3 cups crumbs. Add butter and mix until blended. Press into bottom and up 3/4 sides of 9x3 springform pan.
Reserve 1/2 cup chocolate chips and set aside. Melt remaining chips. Beat cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating constantly. Mix in unwhipped cream, vanilla, Kahlua or coffee, and melted chocolate. Mix until well blended. Pour filling in crust. Sprinkle reserved chips over top.
Bake at 350º for one hour. Turn off oven and leaves cake in oven to cool. Cake will sink and crack. Cover and refrigerate overnight.
