4 oz. plain block chocolate
2 ½ oz. butter
1 tablespoon rum or brandy
Break the plain chocolate into small pieces and place in a small bowl along with the butter. Keep the bowl over a pan of steaming hot water so that the butter and chocolate melt without getting scorched. Once the chocolate and butter have melted completely, take the bowl off the heat and mix in the egg yolks and rum or brandy. Whisk the egg whites till they are stiff and standing in peaks. Fold the egg whites into the chocolate mixture. Pour the chocolate mousse into four individual bowls and leave to set in the refrigerator.
You could try making your chocolate mousse really special by adding Grand Marnier or Cointreau liqueur
