Why I Love This Recipe


Ingredients You'll Need

Crust:
1-1/2 cups chocolate wafer crumbs
1/3 cup finely chopped almonds
3 tablespoons sugar
1/4 cup butter or margarine, melted
Filling:
3 pkgs. (8 oz. each) cream cheese, softened
1 cup sugar
3 eggs
1/2 cup raspberry chocolate chips
2 tablespoons butter or margarine
Glaze:
1/2 cup raspberry chocolate chips
1 tablespoon butter or margarine


Directions

Crust: Combine all ingredients and press firmly onto the bottom and 1-in. up the sides of a 10-in. springform pan.


Filling: Oven set at 325ºF. Beat the cream cheese until smooth. Gradually add the sugar. Add eggs one at a time. Divide this mixture evenly into 2 bowls. Melt the raspberry flavored chocolate and butter together on low heat. Stir into 1 bowl of the cream cheese mixture. Spread the plain cream cheese over prepared crust. Gently spoon the chocolate mixture over this. Swirl mixture by pulling a knife through the batter. Bake for 1 hour. Turn off the oven an leave in the oven for an additional hour. Remove and cool.


Glaze: Melt the last of the raspberry chocolate chips and butter. Spread over the chilled cheesecake.
