Chocolate Velvet Cheesecake
2 cups chocolate cookie crumbs
4 oz melted butter
1 pound + 8 oz semi-sweet chocolate
4 Tbsp butter
3 pounds cream cheese
3 cups cream
2 tsp vanilla
2 cups sugar
4 Tbsp cocoa
Makes 2 9-inch springform pans
Combine cookie crumbs and butter, press into the bottom of the springform pans.
Bake at 350 for about 10 minutes then set aside to cool.
Melt the chocolate and butter together and then cool to lukewarm.
Cream the cream cheese, cream and vanilla.
Add this to the chocolate mixture.
Slowly add in the sugar.
Add the eggs one at a time.
Sift the cocoa over the top and fold in.
Pour into your pans and bake at 325 for about one hour in a water bath.
