1 lb chorizo
1 large can baked beans
1 tsp garlic powder or 1 clove garlic, chopped
1/2 onion, finely chopped

brown up chorizo in a sauce pan with onions and fresh garlic (don't add garlic powder here if you opt for that instead of fresh.)

Once chorizo is cooked and onions are translucent, add baked beans.

Mix together.

Serve with Corn tortillas and spicy mayonnaise (see below)

Spicy Mayo is a very quick and easy condiment. I really love Vegenaise because it's creamier than regular mayo, but use what you prefer. I do not recommend using "Salad Dressing" like Miracle Whip for this.

This is a quick and easy meal that even my kids love.

Pick your favourite chorizo (I prefer the pork kind without casings... if you do pick ones with casings, push the meat out of the casing and brown it up like hamburger.)
