Cinnamon Crumb Blueberry Muffins

These muffins were adapted from a recipe my roommate found on allrecipes but we took a little more time with it,and it was worth it

  • Preparation Time: 25 min
  • Dry ingredients
  • 1 1/2 cup flour
  • 3/4 cup bakers sugar
  • 1/2 tsp baking powder
  • Wet ingredients
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1/3 cup milk
  • 1 tsp vanilla extract(morton and bassett)
  • 1 cup fresh blueberries
  • Topping mix
  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 1/4 cup butter
  • 1 1/2 tsp ground cinnamon

DIRECTIONS

First make topping mix,cut all ingredients in a bowl and cut together until well mixed,when well combined place on parchment paper and flatten, top with another piece and roll out until about an 1/8 inch thick,chill until hardened up,about 10 min,cut out same size circle as your mufffin tins,reserve,sift dry ingredients until combined,put in mixer,combine wet in another bowl and mix,slowly add wet to dry until combined,don't over mix,fold blueberries into mix being careful not to break berries,pour mix evenly into paper lined tins and top with crumb discs,bake at 400 for 20 to 25 min or until golden brown ours took 23 min
