Cinnamon Doughnut Muffin

3/4 cup Butter
2 Eggs
2 1/2 cup Flour
1 1/2 cup Sugar
3/4 tsp Baking Powder
3/4 tsp Baking Soda
1/4 tsp Salt
1/2 tsp Nutmeg
1 cup Milk
2 Tbsp Butter
1 tsp Cinnamon
1/2 cup Sugar

Oven Temperature: 350°F

*Grease muffin pan, or use wrappers

*Set butter and eggs out until room temperature

*In large bowl, beat the butter and sugar until light & creamy; add the eggs, beating the mixture well between each one

*Add dry ingredients and milk to the creamed butter, mixing along the way; by the end, you want to gently fold together

*Using an ice cream scoop or large melon baller, separate the batter into the muffin pans, filling 2/3 full

*Bake 15-20 minutes, or until golden and firm

*Mix topping sugar & cinnamon in a small bowl; melt the butter in a separate bowl

*Remove muffins from oven and immediately brush with butter; sprinkle with cinnamon-sugar

Recipe Tips

*Add colored sprinkles to add for colored theme gathering or for kids

*Serve with eggs and bacon for a full breakfast recipe
