Cinnamon Vanilla Rice Pudding
ingredients for rice:
4 cups cold water
2 cups rice (non instant)
2 heaping tbs butter
3/4 cup sugar
ingredients for pudding:
4 oz. cream cheese
3 med eggs
1 1/2 cup 2 % milk
1/4 cup sugar
4 splashes vanilla
cinnamon (2 shakes)
Cook rice ingredients for 14 mins
Let the rice cool for about 15-20 mins.
Mix cream cheese, vanilla and sugar together
Beat in the 3 eggs to this mixture.
Add milk and cinnamon and stir.
Pour over rice and return to med - high heat for min or 2 mins. stirring frequently
Transfer to a tupperware container and top with additional sugar and sprinkled cinnamon.
Serve warm or put in fridge till ready to eat.

When I take out desired amount from fridge I splash some milk over it and sprinkle a little cinnamon on top
