2 pkgs. (8 oz. each) cream cheese
1/2 cup sugar
1/2 teaspoon vanilla
1 ready to use graham crust
1 can (21 oz.) cherry pie filling
Preheat oven to 350ºF. Let cream cheese soften at room temp. Then mix cream cheese, sugar, and vanilla w/ hand mixer on medium speed until well blended. Then add eggs one at time, mix till blended.
Pour into crust. Bake at 350ºF for 30-40 minutes or until center is almost set. Refrigerate (when cooled) 3 hrs or overnight. Top after refrigeration w/cherry pie filling.
Tips: Do not open oven until at least 30 min of cooking time or center will crack. Remove from oven when cooked and cool on cooling rack.
