Cleaning Out the Fridge Chicken Tortellini Soup

 


INGREDIENTS

  • Splash of olive oil
  • 1 cup carrots, sliced into bite size pieces
  • 1/2 cup celery, sliced into bite size pieces
  • 5 cans chicken broth (~70 ounces)
  • 2 cups cooked shredded chicken
  • 3 cloves garlic, minced
  • 1 tsp Penzey's pasta sprinkle
  • 1/2 tsp parsley
  • 1/2 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • Dash of red pepper flakes
  • 2 cups frozen tortellini
  • 1 cup broccoli, cut into bite sized pieces
  • 1/4 cup spinach, roughly chopped

DIRECTIONS

Add a splash of olive oil to a large pot. Toss in the carrots, celery and garlic. Saute the vegetables for about 3 minutes. Add the cooked chicken, chicken broth and seasonings into the pot and bring to a boil.


Once the broth is boiling add in the tortellini, broccoli and spinach. Continue boiling until tortellini is done. Enjoy.

Hey this is similar to my Tortellini Soup, instead of Chicken there is Bacon in my soup, check it out. Yes it sounds like the Fairy tale about the nail soup :) When a woman made this delicious soup out of nothing :) That is also what I love about making my own soup. Will try yours when I have the ingredients to throw in it, Much regards
