Cleaning Out the Fridge Chicken Tortellini Soup

INGREDIENTS
- Splash of olive oil
- 1 cup carrots, sliced into bite size pieces
- 1/2 cup celery, sliced into bite size pieces
- 5 cans chicken broth (~70 ounces)
- 2 cups cooked shredded chicken
- 3 cloves garlic, minced
- 1 tsp Penzey's pasta sprinkle
- 1/2 tsp parsley
- 1/2 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper, to taste
- Dash of red pepper flakes
- 2 cups frozen tortellini
- 1 cup broccoli, cut into bite sized pieces
- 1/4 cup spinach, roughly chopped
DIRECTIONS
Add a splash of olive oil to a large pot. Toss in the carrots, celery and garlic. Saute the vegetables for about 3 minutes. Add the cooked chicken, chicken broth and seasonings into the pot and bring to a boil.
Once the broth is boiling add in the tortellini, broccoli and spinach. Continue boiling until tortellini is done. Enjoy.
