Cloud Nine Cheesecake
1-1/2 cups fine graham cracker crumbs (18-20 crackers)
1/2 teaspoon cinnamon
1/3 cup brown sugar - packed
1/3 cup butter - melted
8 oz. cream cheese
1-1/2 cups dry curd cottage cheese
1/2 teaspoon salt
1 pkg. fluffy white, cherry fluff or lemon fluff frosting mix
1 tablespoon vanilla
Blend crumbs, cinnamon and brown sugar. Add butter and mix well. Press crumb mixture evenly over bottom and sides of 8 square pan.
Filling: Heat oven to 350ºF. Soften cream cheese. Press cottage cheese and salt through sieve into large mixer bowl containing cream cheese; set aside. Beat frosting mix as directed on package. Mix cheese; gradually beat in prepared frosting and flavoring. Pour into prepared pan. Bake 35 min. Cool; then refrigerate.
Top each serving with fresh or frozen strawberries, thawed.
