Cocoa Swirl Coffee Cake
1/2 cup sugar
4 1/2 tsp. unsweetened cocoa powder
2 TBSP. ground cinnamon
1 cup unsalted butter, softened
8 oz. cream cheese
1 1/2 cups sugar
1 1/2 tsp. pure vanilla extract
2 1/4 cups all purpose flour
1 1/2 tsps. baking powder
3/4 cups raisons (optional)
3/4 cup chopped pecans
Preheat oven to 325. In a small bowl, combine 1/2 cup sugar, coco nd cinnamon: st aside. In a large bowl, cream butter. Beat in cream cheese, 1 1/2 cups of sugar and vanilla. Add eggss, 1 at a time beating well after each. Add flour, baking powder and raisons stirring until smooth. Generously grease a 10 inch tube pan and sprinke pecans over bottom. Spoon 1/2 batter innto pan, Cover with 1/2 cinnamon-cocoa mixture. Spoon remaining batter into pan. Top with remaining cinnamon-cocoa mixture. Bake at 325 degrees for 65-75 minutes or until a wooden pick inserted in center comes out clean. Cool in pan for 15 minutes. Invert onto wire rack to finish cooling.
