Coconut Chess Pie
1 1/2 cup sugar
1/2 Cup buttermilk
1 teaspoon pure vanilla extract
1 tablespoon plain flour
1 cup coconut
1 stick melted butter
1 unbaked pie shell
Beat on high until frothy, eggs, sugar and flour.
The more you beat this the more crunchy the top of the pie will be.
Add buttermilk and melted butter still beating on high.
Add coconut and vanilla, stirring with spatula. Pour into prepared 9" pie shell.
Bake at 325 degrees for about 40 to 60 minutes.
It will puff up in the center (a little) when done.

This is a very good pie. It is one of my husband's favorites.
