Coconut Cream Pie

Serves 8 | Prep Time 15-20 | Cook Time 15-20

Ingredients

2 cups half and half
1 cup coconut milk
2 eggs
3/4 cup sugar
1/4 cup flour
1/4 cup cornstarch
1/4 tsp salt
1 cup sweetened shredded coconut
1 tsp vanilla
1/4 cup cream of coconut
1 baked, cooled pie crust shell


In saucepan, combine half and half, coconut milk, eggs, sugar, flour, cornstarch, salt. Stirring constantly, bring to boil on low. Turn off heat. Stir in coconut, vanilla and cream of coconut. Pour into baked pie shell. Cool completely. Top with Cool Whip and toasted coconut.
