COCONUT KEY LIME BARS

Ingredients

  • 1 cup butter, softened
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar, plus extra to top bars
  • 2 1/4 cups flour, divided
  • 4 eggs, slightly beaten
  • 1 tablespoon lime rind, grated
  • 5 tablespoons lime juice
  • 2 cups sugar
  • 1 cup coconut, shredded

Directions

  • Blend butter, salt, 1/2 cup powdered sugar and 2 cups flour to make a soft dough. Press evenly into ungreased 9x13" baking dish. Bake in preheated 350 degree oven for 15-20 minutes or until golden. Meanwhile, combine eggs, lime rind and juice, sugar and remaining 1/4 cup flour. Blend well until smooth. Pour over baked crust. Sprinkle with coconut. Reduce oven heat to 325 degrees. Bake for 25 minutes or until firm. Cool. Dust with powdered sugar and then slice for serving.
