COCONUT LOAF

Ingredients

  • 1/2 cup butter, softened
  • 1 cups sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 cup milk
  • 1 1/4 cup flaked coconut

Directions

  • Cream together butter and sugar.
  • Add eggs, one at a time, beating well after
  • each.
  • Beat in vanilla.
  • Combine flour baking powder and salt.
  • Add to creamed mixture alternately with milk. Stir in coconut.
  • Pour into greased loaf pan.
  • Bake at 350 degrees for 1 hour, or until toothpick inserted near center comes out clean.
