Coconut Orange Cupcakes

Ingredients

1 cup sugar
2/3 cup vegtable oil
2 eggs
1 cup orange juice
3 cups all purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
3/4 teaspon salt
1 can(11 ounces)mandarin oranges (drained)
1 cup vanilla or white chips

Topping:

1 cup flaked coconut
1/3 cup sugar
2 tablespoons butter, melted


In a mix bowl, combine sugar, oil eggs and orange juice, mix well.


Combine dry ingredients, stir in


o.j mixture just until moistened.


Fold in oranges & chips. fill grease or paper lined cups two thirds full.


Bake @ 375 degrees for 15-20 minutes


or until golden brown.


Cool cups.


Combine topping ingredients,


spinkle over cupcakes.
