Coconut Pudding Mix
1/2 cup shredded coconut (ground in food processor)
1-1/2 cups powdered milk
1 cup sugar
1 cup cornstarch
1/2 tsp salt
Combine all ingredients and mix well. Store in mason jar with tight-fitting lid. Makes 3-1/3 cups mix, yielding 24 servings of prepared pudding.
To make pudding:
For two servings, combine 12/3 cup Coconut Pudding Mix and 1 cup milk in a small saucepan. Heat over low heat, stirring constantly, until mixture boils. Boil gently, stirring constantly, for one minute. Pour into serving dishes and chill until thickened.
