COCONUT SWEET POTATO BALLS

- 2 c. cooked sweet potatoes
- 2 Tbsp brown sugar
- 2 Tbsp butter, melted
- 1/8 tsp cinnamon
- 6 marshmallows; large
- 2 c. toasted coconut
- Mash sweet potatoes with brown sugar, butter and cinnamon. Scoop a handful of sweet potato mixture in your hand and enclose a marshmallow inside. Roll in coconut and place on a cookie sheet lined with Reynold's parchment paper. Continue until you have wrapped all marshmallows in sweet potato mixture and rolled in coconut. Bake at 350 degrees for 15-20 minutes. Watch closely so that your marshmallow doesn't burst your sweet potato ball.
