Coconut Sweet Potato Creamy Soup

Serves 6 | Prep Time 15 | Cook Time 15

Ingredients

2 cans sweet potatoes, drained
1 tsp. salt
2 Tbsp. Oil
1 sweet yellow onion, diced
1 clove garlic, minced
1 diced jalapeno (to taste)
1/4 tsp. cinnamon
1/4 cup packed brown sugar
2 c. chicken broth
1 (15 oz.) can Coconut Milk
1 1/2 c. Milk
salt and pepper to taste


Heat oil in a skillet. Add onion, garlic and jalapeno. Cook 3 minutes. Place sweet potatoes and vegetables in food processor and puree until smooth. Pour back into saucepan and stir in cinnamon, brown sugar, broth, coconut milk and milk. Simmer 5 minutes. Season with salt and pepper.
