COCONUT SWEET POTATO CREAMY SOUP

Ingredients

  • 2 cans sweet potatoes, drained
  • 1 tsp. salt
  • 2 Tbsp. Oil
  • 1 sweet yellow onion, diced
  • 1 clove garlic, minced
  • 1 diced jalapeno (to taste)
  • 1/4 tsp. cinnamon
  • 1/4 cup packed brown sugar
  • 2 c. chicken broth
  • 1 (15 oz.) can Coconut Milk
  • 1 1/2 c. Milk
  • salt and pepper to taste

Directions

  • Heat oil in a skillet. Add onion, garlic and jalapeno. Cook 3 minutes. Place sweet potatoes and vegetables in food processor and puree until smooth. Pour back into saucepan and stir in cinnamon, brown sugar, broth, coconut milk and milk. Simmer 5 minutes. Season with salt and pepper.
