Coconut curried Chicken and Sweet Potatoes
2 tbsp olive oil, divded
1 lb chicken breast tenders
2 large shallots, finley sliced
1.2 cup coarsely chopped red ionion
2.5 tsp curry poweder
1.2 tsp crushed red pepper
1/2 tsp sea salt
1 large sweet potato, peeled and diced (1/2 size)
1 can (14 oz) coconut milk
2 green onions, chopped
2 tbsp chopped fresh cilantro
Heat 1 tbsp oil in pan over med-high heat. Season chicken with salt and pepper; sautÃƒÂ© for 5-7 minutes, or until center no longer pink. Remove chicken and cover.
Add remaining oil to pan. Saute shallots and onion for 3-5 minutes.
Sprnkle in spices and salt.
Add pottoes and coconute milk; bring to boil. Cover andd reduce heat to med-low.
Simmer 10 minutes.
While potatoes are simmering, dice chicken.
Add chicken to curry; simmer 5 more minutes or until potatoes are cooked.
Top with green onion and cilantro.
