Coconut shrimp with chipotle cream sauce
Ingredients for Shrimp:
1 lb bag of peeled, thawed shrimp
1 c unsweetened coconut
1 c ground oats
Mrs Dash southwestern spice
Cyan pepper, Cajun spice, seasoning salt
½ c egg whites
Ingredients for Dip:
2 tbsp non fat greek yogurt
1 tbsp low fat mayo
All spices listed above (add as desired)
Pour oat flour in one small bowl, coconut in another and egg whites in another.
Add ¼ tsp of each spice to egg whites
Heat a non-stick frying pan and coat it with coconut oil.
Dip shrimp into egg whites, then oat flour, then egg whites, then coconut.
Fry on each side for about a minute till crispy.
To make the sauce: mix all ingredients together thoroughly and enjoy with shrimp
