Cod a'la French Country
4 cod fillets
salt & pepper to taste
3tbsp olive oil
4 plum tomatoes
4 kalamata olives-sliced
pinch of thyme
1 tsp dry basil
Sprinkle fillets with salt & pepper
Heat 11/2tbsp.olive oil in large skillet over medium heat-add cod & cook for 30 seconds on each side.
Sprinkle tomatoes,olives,& thyme over cod-reduce heat & continue cooking for 2 minutes.
Add basil & remaining oil.Cook,covered for 1-2 minutes until cod flakes easily with fork.
