Cody's Lil' Buckaroo Meatballs
1# ground turkey
2 egg yolks (only yolks)
1/3 c. raisins - soaked in very hot water 5 mins
1/2 carrot - steamed or boiled until soft & mashable
1/2 zucchini - shredded
5-6 canned whole peeled tomatoes
dehydrated onion to taste
2 T. wheat germ
1/2 c. whole grain bread crumbs
low sodium chicken broth
puree raisins, carrots, tomatoes until smooth
mix all ingredients together except meat then gently mix in the meat - careful not to over work.
roll into small balls (teaspoon size) & gently boil in chicken broth until done.
Serve as is broken up if needed. Store in remaining chicken broth - use w/in 3 days or freeze.

I derived this recipe as a way to introduce my child to meat products when he was an infant - but they are awesome & moist so use them from infancy to college!
