Cody's Spiced Nuts & Choco Chunk Cookies

Serves approx 56 cookies | Prep Time 20 mins | Cook Time 10 mins


1 cup butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp. vanilla
2 ½ cups oatmeal (loosely ground in a mill, but not too finely)
2 cups flour
½ tsp. salt
1 tsp. baking powder
1 tsp. soda
½ tsp. cinnamon
2 roughly chunked-up organic dark chocolate candy bars
1 ½ cups chopped spiced nuts

Cream the butter and both sugars.

Add eggs and vanilla and blend.

Mix in flour, salt, baking powder, soda and cinnamon.

Incorporate dry ingredients into butter/sugar mixture.

Add candy bar chunks and spiced nuts – stir until just mixed in.

Roll into balls and place two inches apart on cookie sheet.

Bake 10 minutes @ 375 degrees.

Makes approximately 56 cookies

Measurements ok to double.

My sister made this recipe for us when we returned from the hospital with our first child, Cody. The cookies cook up fat & slightly crispy outside and just a bit soft to the bite, but not too soft. She started with the basics from the famous Nordstrom recipe and improved upon it (believe that?) and now there is no other recipe that we'll use.
