Why I Love This Recipe


Ingredients You'll Need

Crust:
1 cup finely ground pecans
1/4 cup sugar
2 tablespoons butter
Filling:
1 envelope unflavored gelatin
3 tablespoons dark rum
1 tablespoon instant coffee
3 tablespoons hot water
11 ounces cream cheese, softened
1 cup powdered sugar
1 cup whipping cream
2 teaspoons vanilla
1/2 cup pecan halves


Directions

Combine crust ingredients and press into the bottom of a 9-inch springform pan. Bake at 350ºF for 10 minutes. Cool.


In a small saucepan, soften gelatin in rum. Place over low heat and dissolve. Cool slightly. Using the steel blade of a food processor, mix cream cheese with powdered sugar and vanilla. Dissolve coffee in hot water and add to cream cheese mixture. Add softened gelatin and blend. In a separate bowl, whip cream until soft peaks form. Combine cream cheese mixture with whipped cream. Pour into prepared crust. Chill. Garnish with whipped cream and pecan halves.
