Colorful Carrots

Ingredients

2 pounds sliced carrots
1 medium sliced red onion
1 small pkg frozen peas
1 small sliced green pepper
1 can tomato soup
1/2 cup vegetable oil
1 cup sugar
3/4 cup cider vinegar
1 tsp prepared mustard
1 tsp Worcestershire sauce
1/2 tsp salt
1/4 tsp pepper


Cook carrots in a small amount of water for 5 minutes. Rinse under cold water, drain and set aside.


Separate onion slices to form rings.


In a medium bowl, alternate layers of carrots, peas, onions and green pepper.


In a medium bowl, mix soup, sugar and other remaining ingredients till smooth.


Pour soup mixture over vegetables; cover and place in refrigerator for several hours or overnight.
