Why I Love This Recipe

This is a recipe I've been having for Thanksgiving ever since I was little. I think it came out of a Junior League cookbook or something. In any case, it puts those marshmallow-covered sweet potato casseroles to shame. :) It's more like a dessert but we eat it with our main meal at Thanksgiving.


Ingredients You'll Need

3 C sweet potatoes (cooked)
2 eggs
1 cup sugar
1 cup canned milk
1/3 cup butter
1 tsp vanilla

Topping
1 cup coconut
1 cup Chopped pecans
1 cup brown sugar
1/3 cup flour
1/3 cup butter


Directions

Boil sweet potatoes in skins until tender. Then peel and measure. Add all the above ingredients together in bowl and blend with mixer or blender. Pour into 9 x 13 glass dish.


Make topping and sprinkle over top of sweet potato mixture. Bake at 375 for 25 minutes.
