  • 3 C sweet potatoes (cooked)
  • 2 eggs
  • 1 cup sugar
  • 1 cup canned milk
  • 1/3 cup butter
  • 1 tsp vanilla
  • Topping
  • 1 cup coconut
  • 1 cup Chopped pecans
  • 1 cup brown sugar
  • 1/3 cup flour
  • 1/3 cup butter


  • Boil sweet potatoes in skins until tender. Then peel and measure. Add all the above ingredients together in bowl and blend with mixer or blender. Pour into 9 x 13 glass dish.
  • Make topping and sprinkle over top of sweet potato mixture. Bake at 375 for 25 minutes.


This is a recipe I've been having for Thanksgiving ever since I was little. I think it came out of a Junior League cookbook or something. In any case, it puts those marshmallow-covered sweet potato casseroles to shame. :) It's more like a dessert but we eat it with our main meal at Thanksgiving.
