Cool And Creamy Cucumber Spread
3 medium cucumbers
1 -8 ounce and 1 -3 ounce package of softened cream cheese
1/2 cup sour cream
1/4 cup snipped fresh dill
(or 2 tablespoons dry dill weed
1 1/2 teaspoons lemon juice
1 envelope vegetable soup mix (dry)
Thinly 1 slice cucumber and arrange on bottom of a lightly oiled 4 cup ring mold.
Peel, seed and coarsley chop remaining cucumbers.
With food processor or electric mixer combine cream cheese and 1 cup cucumbers, sour cream, dill, lemon juice, and vegetable soup mix until smooth.
Stir in remaining chopped cucumbers.
Pour into prepared mold, chill until firm - at least 3 hours.
To serve unmold onto a serving plate.
You can fill the center with cherry tomatoes or other veggies
