INGREDIENTS
- Cooking Time: 0

- Preparation Time: 3
- 1 part coconut water
- 1 part coconut vodka
- fresh lemon and/or limoncello
DIRECTIONS
In a shaker with lots of ice, shake Coconut Water (fresh from the coconut works best) with Coconut Vodka. Strain into martini glass and squeeze in some fresh lemon juice, or use a spritz of limoncello, or do a little of both (my husband makes limoncello every year at Christmas using Giada De Laurentiis' recipe -- found on the food network website).
Garnish with a slice of lemon (optional)

Chang's because we both adore coconut and the waitress promoted it as being one of the less-sweet beverages on their specialty drink list.
