Coq a Fromage
3 Large chicken breasts
1 Cup of large black olives
2 Cups of hearty red wine
1/2 of a Cup of olive oil
Sea salt and fresh ground pepper to taste
Take the chicken and cut it so that there is room to stuff. The cut must not go all the way through or all your ingredients will fall out. Slice your black olives into pieces about 1/4 of an inch wide. Set aside.
Take your cheese and cut it into pieces that will fit snugly into each piece of chicken. Set aside.
Now pour the two cups of wine into a container and marinade the chicken for 45 minutes. After the chicken is done marinading, put the cheese inside your chicken along with about 1/3 of a cup of olives.
Now heat a skillet large enough to fit all three chickens to high heat. Pour olive oil into the skillet and wait 1 minute. Now put chicken on and wait about ten minutes. The outside should be a nice golden brown and the cheese will have melted. Stoves vary in power, so check to see if it is really done before eating. If not, don't be afraid to through it back on.
This dish goes great with a mushroom risotto and a dry white wine.
