CORIANDER-SPICED CHICKEN OR LAMB KEBOBS

Ingredients

  • 1 1/2 T olive oil
  • 1/2 t red wine vinegar
  • 1 large garlic clove, minced
  • 1 t ground cumin
  • 1 t ground coriander
  • 1/4 t cayenne
  • 1/4 t salt
  • 1 1/2 lbs lamb or chicken

Directions

  • Whisk together all ingredients except the meat
  • Add meat, toss to coat (lightly coated)
  • Marinate 5-10 minutes
  • Grill skewers. Lamb 8 minutes or until crust brown but pink inside (turn once). Chicken 10 minutes until no longer pink.
  • Serve with Simple Lemon Yogurt Sauce
