Coriander-Spiced Chicken or Lamb Kebobs
1 1/2 T olive oil
1/2 t red wine vinegar
1 large garlic clove, minced
1 t ground cumin
1 t ground coriander
1/4 t cayenne
1/4 t salt
1 1/2 lbs lamb or chicken
Whisk together all ingredients except the meat
Add meat, toss to coat (lightly coated)
Marinate 5-10 minutes
Grill skewers. Lamb 8 minutes or until crust brown but pink inside (turn once). Chicken 10 minutes until no longer pink.
Serve with Simple Lemon Yogurt Sauce
