CORN PANCAKES
Corn Pancakes
"Pass the butter and maple syrup!" yummy!!!
INGREDIENTS
- Servings: Makes 16 (4") pancakes.
- 1 1/4 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 eggs, beaten
- 1 c. milk
- 2 Tb. salad oil
- 2 c. corn, cut from cob
DIRECTIONS
Sift together dry ingredients.
Combine eggs, milk and oil. Mix into dry ingredients. Stir in corn.
Bake on preheated, lightly greasaed griddle as for pancakes. Serve with butter and honey or maple syrup.
