- Cooking Time:
- Servings: Makes 16 (4") pancakes.
- Preparation Time:
- 1 1/4 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 eggs, beaten
- 1 c. milk
- 2 Tb. salad oil
- 2 c. corn, cut from cob
- Sift together dry ingredients.
- Combine eggs, milk and oil. Mix into dry ingredients. Stir in corn.
- Bake on preheated, lightly greasaed griddle as for pancakes. Serve with butter and honey or maple syrup.
