CORN PANCAKES

  • Servings: Makes 16 (4") pancakes.

Ingredients

  • 1 1/4 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs, beaten
  • 1 c. milk
  • 2 Tb. salad oil
  • 2 c. corn, cut from cob

Directions

  • Sift together dry ingredients.
  • Combine eggs, milk and oil. Mix into dry ingredients. Stir in corn.
  • Bake on preheated, lightly greasaed griddle as for pancakes. Serve with butter and honey or maple syrup.

Notes

"Pass the butter and maple syrup!" yummy!!!
