CORNMEAL MOLASSES BREAD

Ingredients

  • 3 Cups Water
  • 2/3 Cup Yellow Cornmeal
  • 4 Tbsp. Shortening
  • 1 Cup Water ( for yeast )
  • 2 Tbsp. Sugar
  • 3 tsp. Salt
  • 2/3 Cup Light Molasses
  • 3 pkgs Yeast
  • 6 Cups Bread Flour
  • plus 4-5 Cups Flour

Directions

  • Boil & stir constantly for 2 minutes, Water, Salt, & Cornmeal. Add Molasses & Shortening to hot mixture, stir well. Dissolve Yeast in 1 Cup water with Sugar; add to cooked Cornmeal mixture.
  • mix well. Add 6 Cups flour, mixing well. Work in 4-5 more Cups Flour; dough should be easy to to handle. Put dough on floured surface and knead.
  • Place dough in greased bowl & cover. Let rise till double in size. Punch down & cut into 3 pieces. Grease 3 round pans & sprinkle with Cornmeal. Put dough in pans & let rise till double in size. Bake at 375 degrees for about 45 minutes.
