Coucous with Feta Cheese and Arugula

Why I Love This Recipe

I make this recipe all the time and all of my children, especially my son Devin and my daughter Kaminie loves it! It's easy to prepare and healthy too.


Ingredients You'll Need

1 Cup Middle Eastern Coucous
1 1/3 cup water
1 Tbsp. Butter
1 tsp. Olive Oil
2 oz. Crumbled Feta Cheese
Juice of 1 lemon
1 tsp. ground gumin
1/4 tsp. ground black pepper
3 cloves fresh chopped garlic
2 cups Arugula (you can use baby spinach if you like too)


Directions

Bring water and butter to a boil and remove from off heat. Add Couscous and cover for about 10 minutes. With a fork, fluff the couscous. Add remaining ingredients and mix well (it's important to add the remaining ingredients while the coucous is still hot as this helps the flavors to blend better). Can be served warm or at room temperature.


Recipe Variations:


You can also make this dish more hearty by adding chicken, shrimp or sausage.


Adding Shrimp:


Saute raw shrimp in butter, garlic, black pepper and salt. Layer on top of coucous.


Adding Chicken:


Saute strips of chicken breast in olive oil, garlic, oinions, black pepper and salt. Layer on top of coucous.


Adding Sausage:


Cut up Kilbaska Turkey sausage (or any sausage you like) and saute in olive oil until lightly browned. Mix in with the coucous.
