Country Pineapple Casserole
1/2 cup butter
2 cups sugar
2 cans (20 ounces each) crushed pineapple, drained
3 tablespoons lemon juice
10 slices day old 7 Grain Bread, cubed
4 pineapple rings for decoration, optional.
In a large mixing bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Stir in pineapple and lemon juice. Fold in the bread cubes. Pour into a greased 13 inch x 9 inch x 2 inch baking pan. Bake uncovered at 325ºF for 35-40 minutes or until set. Yield 10 servings.
Pairs Well With
In the original recipe they used white bread,but we used 7 Grain Bread instead.
