  • red or yellow peppers
  • couscous
  • herbs (basil, rosemary, parsley)
  • tpasted pinenuts
  • oil
  • feta cheese
  • can of chickpeas


  • slice the top off a red or yellow pepper
  • clean out the seeds and veins
  • simmer top and bottom in a pot of boiling water for 10 mins (make sure there not mushy!!!)
  • make cousecous according to instructions
  • add herbs, toasted pine nuts,1 tbso olive oil, crumbled feta cheese, canned drained chick peas
  • fill pepper with mixture
