COUSCOUS VEGGIE SALAD

Couscous Veggie Salad

Basically this is a combination of things I was trying to use up in my cupboard. So I'm sure it would be great with any veg (fresh or canned) that you wanted to use.

 


INGREDIENTS

  • Cooking Time: 10 mins
  • Servings: ~6 1 cup servings
  • Preparation Time: 15 mins
  • 2 cups dry couscous
  • 2 1/2 cups water or vegetable broth
  • 1 15 oz can of corn
  • 1 15 oz can of black beans
  • 1 bunch of cilantro (cleaned and chopped)
  • 1 white onion
  • salt and pepper to taste
  • Sriracha
  • Rice Vinegar

DIRECTIONS

Bring the water or broth to a boil, then add couscous to saucepan, and lower heat. Stir and fluff the couscous. Once most of the liquid is absorbed (~1 min), turn the heat off and cover the pan. Let the couscous sit for about five mintues. While you are waiting, drain the corn and beans and place into a bowl. Chop the cilantro and onion, place into bowl. Once the couscous is ready, mix into other ingredients. Add salt and peper to taste. I add a little rice vinegar for a light dressing and some sriracha for heat. It is also very good with some of your favorite salsa- if you want to add more moisture. Serve warm or cold.
